Beetroot Pachidi
Beetroot pachidi is a delicious and colorful South Indian dish that is perfect as a side dish for rice, chapati or dosa.

Ingredients
1 large beetroot cut in small cubes
1 cup coconut
1 tsp mustard
½ tsp jeera
Ginger – 2inch size
Chillies – 2 no’s
1 cup curd
Dried red chilli -2 no’s
Curry leaves
Salt to taste
Getting it done:
- In a pan, add the beetroot cubes, add ¼ cup water and salt.
- Mix properly and cook by covering the pan.
- Once cooled, grind to fine paste.
- Grind together 1 cup coconut, 1 tsp mustard, ½ tsp jeera, ginger & chillies and make thick paste.
- Now add the beetroot paste to this mix.
- Cook on a medium flame for 5 minutes.
- Add 1 cup curd and mix thoroughly.
- Add salt if required and mix.
- Now in a small pan, take 1 tsp oil and add 1 tsp mustard, 2 numbers of red chilli and few curry leaves.
- Add this to the mixture and the dish is ready to serve.
